This is a quickly made curry prepared with strips of beef steak, cubed aubergine (eggplant) and onion in a cream sauce flavoured with green curry paste. Serve with fluffy rice and a salad

Choose firm paw-paws – or papayas as they are something called – for this delicious salad.

Cellophane or ‘glass’ noodles are made from mung beans. They are sold dried, so they need soaking before use.

 

 




BARBECUED CHICKEN LEGS

Just the thing to put on the barbecue-chicken legs, coated with a spicy, curry-like butter, then grilled until crispy and golden, serve with a crisp green seasonal salad and rice.

Ingredients:


Serves 6

12 chicken drumsticks

SPICED BUTTER:
175 g/6 oz/ ¾ cup butter
2 garlic cloves crushed
1 tsp grated ginger root
2 tsp ground turmeric
4 tsp chilli powder
2 tbsp lime juice
3 tbsp mango chutney

Directions

1.  Prepare a barbecue with medium coals or preheat a conventional grill (broiler) to medium.

2.    To male the spiced butter mixture, beat the butter with the garlic, ginger, turmeric, chilli powder, lime juice and chutney until it is blended well.

3.    Using a sharp knife, slash each chicken leg to the bone 3-4 times.

4. Cook the drumsticks over the barbecue for 12-15 minutes or until almost cooked. Alternatively, grill (broil) the chicken for about 10-12 minutes until almost cooked, turning halfway through.

5. Spread the chicken legs liberally with the butter mixture and continue to cook for a further 5-6 minutes, turning and basting frequently with the butter until golden and crisp.

6.  Serve hot or cold with a crisp green salad and rice.

 

VARIATION
This spicy butter would be equally effective on grilled (broiled) chicken or turkey breast fillets. Skin before coating with the mixture.
