This is a quickly made curry prepared with strips of beef steak, cubed aubergine (eggplant) and onion in a cream sauce flavoured with green curry paste. Serve with fluffy rice and a salad

Choose firm paw-paws – or papayas as they are something called – for this delicious salad.

(SHRIMPCELLOPHANE NOODLES WITH SHRIMPS & BEAN-SPROUTS

Cellophane or ‘glass’ noodles are made from mung beans. They are sold dried, so they need soaking before use.

 

 

CRUDITÉS WITH SHRIMP SAUCE

This is a classic Thai starter-fruit and vegetable crudites served with a spicy, garlicky shrimp sauce. It is served at every meal, and each family has its own favourite recipe
.

IIngredients:

SERVES 6
About 750g/1 ½ 1b prepared raw fruit and
vegetable, such as broccoli, cauliflower,
apple, pineapple, cucumber, celery, (bell)
peppers and mushrooms

SAUCE :
60g/2 oz dried shrimps
1cm/ ½ in cube shrimp paste
3 garlic cloves, crushed
4 red chillies, deseeded and chopped
6 stems fresh coriander (cilantro), chopped coarsely
juice of 2 limes
fish sauce, to taste
brown sugar, to taste

Directions

1.            Soak the dried shrimps in warm water for 10 minute.

2.            To make the sauce, place the shrimps paste, drained shrimps, garlic, chillies and coriander (cilantro ) in a food processor or blender and process until well chopped but not smooth.

3.            Turn the sauce mixture into a bowl and add the lime juice, mixing well.

4.            Add fish sauce and brown sugar to taste to the sauce, mixing to blend well, cover the bowl tightly and chill the sauce in the refrigerator for least 12 hours or overtime .

5.            To serve, arrange the fruit and vegetables attractively on a large serving plate, place the prepared sauce in the center for dipping.

ALTERNATIVE

Hard-boiled quail’s eggs are often added to this traditional fruit and vegetable platter and certainly would be offered on a special occasion.
