This is a quickly made curry prepared with strips of beef steak, cubed aubergine (eggplant) and onion in a cream sauce flavoured with green curry paste. Serve with fluffy rice and a salad

Choose firm paw-paws – or papayas as they are something called – for this delicious salad.

Cellophane or ‘glass’ noodles are made from mung beans. They are sold dried, so they need soaking before use.

 

 

HOT AND SOUR SOUP

HOT AND SOUR SOUP

A very traditional staple of the Thai national diet, this soup is sold on street corners, at food bars and by mobile vendors all over country.

Ingredients:


Serves 4
1 tbsp sunflower oil
250 g/8 oz smoked tofu (bean curd), sliced
90 g/3 oz/1 cup shiitake mushrooms, sliced
2 tbsp chopped fresh coriander (cilantro)
125 g/4 oz/2 cups watercress
1 red chilli, sliced finely, to garnish

STOCK:
1 tbsp tamarind pulp
2 dried red chillies, chopped
2 kaffir lime leaves, torn in half
2.5 cm/1 inch piece ginger root, chopped
5 cm/2 inch piece galangal, chopped
1 stalk lemon grass, chopped
1 onion, quartered
1 litre/1 ¼ pints/4 cups cold water

Directions

1.                  Put all the ingredients for the stock into a saucepan and bring to the boil. Simmer for 5 minutes. Remove from the heat and strain, reserving the stock.

2.                  Heat the oil in a wok or large, heavy frying pan (skillet) and cook the tofu (bean curd) over a high heat for about 2 minutes, stirring constantly. Add the strained stock.

3.                  Add the mushrooms and coriander (cilantro), and boil for 3 minutes. Add the watercress and boil for 1 minute.

4.                  Serve immediately. Garnished with red chilli slices.

MUSHROOMS
You might like to try a mixture of different types of mushroom. Oyster, button and staw mushrooms are all suitable.
