This is a quickly made curry prepared with strips of beef steak, cubed aubergine (eggplant) and onion in a cream sauce flavoured with green curry paste. Serve with fluffy rice and a salad

Choose firm paw-paws – or papayas as they are something called – for this delicious salad.

Cellophane or ‘glass’ noodles are made from mung beans. They are sold dried, so they need soaking before use.

FILLED CUCUMBER CUPS

There are two types of Thai cooking: the elaborate Royal cooking, and the peasant style of cooking. This dish is form the royal cuisine, where care is taken over presentation, and the flavours are subtle.

Ingredients:


SERVES 4-6

SERVES 6
1 cucumber
4 spring onions (scallions), chopped finely
4 tbsp lime juice
2 small red chillies, deseeded and chopped finely
3 tsp sugar
150 g/5 oz/1 ¼ cups ground roasted peanuts.
¼ tsp salt
3 shallots, sliced finely and deep-fried, to garnish

Directions

1.                  To make the cucumber cups, cut the ends off the cucumber, and divide it into 3 equal lengths. Mark a line around the centre of each one as a guide.

2.                  Make a zigzag cut all the way around the centre of each section, always pointing the knife towards the centre of the cucumber. Pull apart the 2 halves.

3.                  Scoop out the centre of each cup with a melon baler or teaspoon.

4.                  Put the remaining ingredients, except for the shallots, in a bowl and mix well to combine.

5.                  Divide the filling between the 6 cucumber cups and arrange on a serving plate. Garnish with the deep-fried shallots.

CHERRY TOMATOES

Cherry tomatoes can also be hallowed out very simply with a melon baler and filled with this mixture. The two look very pretty arranged together on a serving dish.
