FRIED RICE AND
PRAWNS (SHRIMP)
When you‘ve got
one eye on the clock and a meal to make this the one! Made in a trice,
yet simply stunning to look at, its taste belies its simplicity.

EGGS
This recipe is supposedly so called
because it is an easy dish for a son-in-law to cook to impress his new
mother-in-law!

GREEN
BEEF CURRY
This is a quickly made curry prepared with strips of beef steak, cubed
aubergine (eggplant) and onion in a cream sauce flavoured with green
curry paste. Serve with fluffy rice and a salad

PAW
- PAW (PAPAYA SALAD)
Choose firm paw-paws – or papayas as they are something called – for
this delicious salad.

(SHRIMPCELLOPHANE
NOODLES WITH SHRIMPS & BEAN-SPROUTS
Cellophane or ‘glass’ noodles are made from mung beans. They are
sold dried, so they need soaking before use.

GREEN
RICE
A
deliciously different way to serve plain rice for a special occasion or
to liven up a simple meal.
Ingredients:
SERVES 4
2 tbsp olive oil
500 g/1 lb/2 ¼ cups basmati or Thai jasmine rice, soaked for a hour,
washed and drained
750 ml/1 ¼ pints/3 cups coconut milk
1 tsp salt
1 bay leaf
2 tbsp chopped fresh coriander (cilantro)
2 tbsp chopped fresh mint
2 green chillies, deseeded and chopped finely
Directions
1.
Heat the oil in a saucepan, add the rice and stir until it
becomes translucent.
2.
Add the coconut milk, salt and bay leaf. Bring to the boil and
cook until all the liquid is absorbed.
3.
Lower the heat as much as possible, cover the saucepan tightly
and cook for 10 minutes.
4.
Remove the bay leaf and stir in the coriander (cilantro), mint
and green chillies. Fork through the rice gently any serve.
GARNISHES
The contrasting colours of this dish make if particularly attractive,
and it can be made to look even more interesting with a carefully chosen
garnish. Two segments of fresh lime complement the coriander (cilantro)
perfectly. Alternatively, you could simply use some small sprigs of
whole fresh coriander (cilantro) leaves.
COOKING
IN A MICROWAVE
To save time, or to make some room on your stove, step 3 can be done in
a microwave. Transfer the rice to a microwave container, cover tightly
and cook on high
for 4-5 minutes. Remove
the bay leaf, and stir in the herbs and chillies. Fork through the rice
gently and serve
