This dish is consider the Thai national dish, as it is made eaten everywhere-a one-dish fast food or eating on the move. Ingredients: Directions1. Cook the rice noodles as directed on the pack, or soak them in boiling water for 5 minutes 2. Grind together the chillies, shallots, sugar, tamarind water, lime juice, light soy sauce and black pepper. 3. Heat both the oils together in a wok or large, heavy frying pan (skillet) over a high heat. Add the tofu (bean curd) and stir for a minute. 4. Add the chilli mixture, Bring to the boil, and stir for about minutes until thickened. 5. Drain the rice noodles and add them to the chilli mixture. Use 2 spoons to lift and stir them until they are no longer steaming. Serve immediately, garnishes with the peanuts.
