This is a quickly made curry prepared with strips of beef steak, cubed aubergine (eggplant) and onion in a cream sauce flavoured with green curry paste. Serve with fluffy rice and a salad

Choose firm paw-paws – or papayas as they are something called – for this delicious salad.

Cellophane or ‘glass’ noodles are made from mung beans. They are sold dried, so they need soaking before use.

 

 

THAI-STYLE STIR-FRIED NOODLES

THAI-STYLE STIR-FRIED NOODLES

This dish is consider the Thai national dish, as it is made eaten everywhere-a one-dish fast food or eating on the move.

Ingredients:


SERVES 4

250 g/8 oz dried rice noodles
2 red chillies, deseeded and chopped finely
2 shallots, chopped finely
2 tbsp sugar
2 tbsp tamarind water
1 tbsp lime juice
2 tbsp light soy sauce
black pepper
1 tbsp sunflower oil
1 tbsp sesame oil
175 g/6 oz/ ¾ cup smoked tofu (bean curd) diced
2 tbsp chopped roasted peanuts

Directions

1.                  Cook the rice noodles as directed on the pack, or soak them in boiling water for 5 minutes

2.                  Grind together the chillies, shallots, sugar, tamarind water, lime juice, light soy sauce and black pepper.

3.                  Heat both the oils together in a wok or large, heavy frying pan (skillet) over a high heat. Add the tofu (bean curd) and stir for a minute.

4.                  Add the chilli mixture, Bring to the boil, and stir for about minutes until thickened.

5.                  Drain the rice noodles and add them to the chilli mixture. Use 2 spoons to lift and stir them until they are no longer steaming. Serve immediately, garnishes with the peanuts.

 

ONE-DISH-MEAL
This is quick one-dish meal that is very useful if you are catering for a single vegetarian in the family
.
