This is a quickly made curry prepared with strips of beef steak, cubed aubergine (eggplant) and onion in a cream sauce flavoured with green curry paste. Serve with fluffy rice and a salad

Choose firm paw-paws – or papayas as they are something called – for this delicious salad.

Cellophane or ‘glass’ noodles are made from mung beans. They are sold dried, so they need soaking before use.

 

 

STIR-FRIED GREENS


STIR-FRIED GREENS

This is an easy recipe to make as a quick accompaniment to a main course. The water chestnuts give a delicious crunch to the greens.

Ingredients:


SERVES 4
1 tbsp sunflower
1 garlic clove, halved
2 spring onions (scallions), sliced finely
227 g/7 ˝ oz can water chestnuts, drained and sliced finely (optional)
500 g/1 lb spinach, any tough stalks removed
1 tsp sherry vinegar
1 tsp light soy sauce
pepper

Directions

1.                  Heat the oil a in wok large, heavy frying pan (skillet) over a high heat.

2.                  Add the garlic and cook, stirring, for a 1 minutes. If the garlic should brown, remove if immediately.

3.                  Add the spring onions (scallions) and water chestnuts, if using and stir for 2-3 minutes. Add the spinach and stir

4.                  Add the sherry vinegar, soy sauce and a sprinkling of pepper, cook stirring until the spinach is tender. Remove the garlic.

5.                  Use a slotted spoon in order to drain off the excess liquid and serve        immediately.


TIPS
These stir-fried greens are delicious served as an accompaniment to the red curry with cashew (see page 102). Several types of oriental greens (for example , choi sam and pak choi) are widely available and any of these can be successfully substituted for the spinach.
