This is a quickly made curry prepared with strips of beef steak, cubed aubergine (eggplant) and onion in a cream sauce flavoured with green curry paste. Serve with fluffy rice and a salad

Choose firm paw-paws – or papayas as they are something called – for this delicious salad.

Cellophane or ‘glass’ noodles are made from mung beans. They are sold dried, so they need soaking before use.

 

 

CAULIFLOWER WITH THAI SPINACH


CAULIFLOWER WITH THAI SPINACH

This is a delicious way to cook cauliflower-even without the spinach!

Ingredients:


SERVES 4
175 g/6 oz cauliflower, cut into florets
1 garlic clove
˝ tsp turmeric
1 tbsp coriander (cilantro) root or stem
1 tbsp sunflower oil
2 spring onions (scallions), cut into 2.5 cm/1 inch pieces
125 g/4 oz Thai spinach, tough stalks removed, or oriental greens
1 tsp yellow mustard seeds

Directions

1.                  Blanch the cauliflower, rinse in cold running water drain. Set aside.

2.                  Grind the garlic, turmeric and coriander (cilantro) root or stem together in a pestle and mortar or spice grinder.

3.                  Heat the oil in a wok or large, heavy frying pan (skillet). Add the spring onions (scallions) and stir over a high heat for 2 minutes. Add the Thai spinach, or greens, and stir for 1 minute. Set aside.

4.                  Return the wok or frying pan (skillet) to the heat and add the mustard seeds. Stir until they start to pop, then add the turmeric mixture and the cauliflower, and stir until all the cauliflower is coated.

5.                  Serve with the spinach or greens on a warmed serving plate.


SUBSITITUTES
Oriental greens are now available in many of the larger supermarkets; however, spinach or chard is equally good with the cauliflower.
