FRIED RICE AND
PRAWNS (SHRIMP)
When you‘ve got
one eye on the clock and a meal to make this the one! Made in a trice,
yet simply stunning to look at, its taste belies its simplicity.

EGGS
This recipe is supposedly so called
because it is an easy dish for a son-in-law to cook to impress his new
mother-in-law!

GREEN
BEEF CURRY
This is a quickly made curry prepared with strips of beef steak, cubed
aubergine (eggplant) and onion in a cream sauce flavoured with green
curry paste. Serve with fluffy rice and a salad

PAW
- PAW (PAPAYA SALAD)
Choose firm paw-paws – or papayas as they are something called – for
this delicious salad.

(SHRIMPCELLOPHANE
NOODLES WITH SHRIMPS & BEAN-SPROUTS
Cellophane or ‘glass’ noodles are made from mung beans. They are
sold dried, so they need soaking before use.

CARROT
AND CORIANDER (CILANTRO) SALAD
This
is a tangy, crunchy salad, which is popular with everyone. It makes an
ideal accompaniment to aubergine (eggplant) & mushroom satay with peanut
sauce
Ingredients:
SERVES 4
4 large carrots
2 celery sticks, cut into matchsticks
2 tbsp roughly chopped fresh coriander (cilantro)
DRESSING:
1 tbsp sesame oil
1 ˝ tbsp rice vinegar
˝ tsp sugar
˝ tsp salt
Directions
1.
To create
flower-shaped carrot slices, as shown, cut several grooves lengthways
along each carrot before slicing it.
2.
Slice each
carrot into very thin slices, using the slicing cutter of a grater.
3.
Combine the
carrot, celery and coriander (cilantro) in a bowl. Combine the
dressing the ingredients thoroughly
4.
Just before
serving, toss the carrot, celery and coriander mixture in the dressing
and transfer to a serving dish.
GARNISHES
You can make this attractive salad look even more appealing with the
addition of a simple garnish. Cut very fine strips of carrot with a
vegetable peeler and curl into a spiral, or drop in iced water for a few
minutes to make them curl up alternatively you could make very thin cuts
through a chunk of celery from the top almost to the bottom, and leave
in iced water until the founds curl up.
SESAME OIL
Sesame oil is a very aromatic oil used in small quantities in a lot of
oriental cooking, to impart a special flavour to salad dressing and
sauces. If it is not available, you can substitute any high quality oil,
though the dressing will not have the distinctive Thai flavour.
