This is a quickly made curry prepared with strips of beef steak, cubed aubergine (eggplant) and onion in a cream sauce flavoured with green curry paste. Serve with fluffy rice and a salad

Choose firm paw-paws – or papayas as they are something called – for this delicious salad.

Cellophane or ‘glass’ noodles are made from mung beans. They are sold dried, so they need soaking before use.

 

 

CUCUMBER SALAD


CUCUMBER SALAD

This is a very refreshing accompaniment to any dish and is an excellent ‘cooler’ for curries. Alternatively, it can be served simply as a salad on a buffet.

Ingredients:


SERVES 4

4 large carrots
2 celery sticks, cut into matchsticks
2 tbsp roughly chopped fresh coriander (cilantro)

DRESSING:
1 tbsp sesame oil
1 ½ tbsp rice vinegar
½ tsp sugar
½ tsp salt

Directions

  1. Peel the cucumber, halve it lengthways, and deseed it, using a teaspoon or a melon baller.
     
  2. Slice the cucumber thinly, and arrange the cucumber slices on a serving plate.
     
  3. To make the dressing, combine the vinegar, sugar and salt in a bowl. Pour on the hot water and stir until the sugar has dissolved.
     
  4. Pour the dressing evenly over the cucumber slices.
     
  5. Sprinkle the shallot slices over the cucumber. Chill the salad before serving.


RICE VINEGAR
There are two kinds of rice vinegar, each of which is less acidic than western vinegars. Red vinegar is made from fermented rice, and has a dark colour and depth of flavour . White rice vinegar is distilled from rice wine and has a stronger flavour than red vinegar. Because of this distinctive but subtle flavour , white rice vinegar is preferred by many western cooks. If it is unavailable, you can see white wine vinegar or cider vinegar.

CUCUMBERS
Some people dislike the bitter taste that cucumber can have–peeling off the skin and dressing the cucumber often eliminates this problem. Using a melon baller is the neatest method of deseeding a cucumber, although a rounded teaspoon will do instead .
