one eye on the clock and a meal to make this the one! Made in a trice,
yet simply stunning to look at, its taste belies its simplicity.

EGGS
This recipe is supposedly so called
because it is an easy dish for a son-in-law to cook to impress his new
mother-in-law!

GREEN
BEEF CURRY
This is a quickly made curry prepared with strips of beef steak, cubed
aubergine (eggplant) and onion in a cream sauce flavoured with green
curry paste. Serve with fluffy rice and a salad

PAW
- PAW (PAPAYA SALAD)
Choose firm paw-paws – or papayas as they are something called – for
this delicious salad.

(SHRIMPCELLOPHANE
NOODLES WITH SHRIMPS & BEAN-SPROUTS
Cellophane or ‘glass’ noodles are made from mung beans. They are
sold dried, so they need soaking before use.

HOT AND SOUR DUCK
SALAD
A favorite Thai dish
that can be made with chicken or beef and served with a spicy peanut
sauce
Ingredients:
SERVES 4
2 heads crisp salad lettuce, washed and separated into leaves
2 shallots, sliced thinly
4 spring onions (scallions), chopped
1 celery stick, sliced finely into julienne strips
5 cm /2 inch piece cucumber, cut into julienne strips
125 g/4 oz bean-sprouts
200 g/7 oz canned water chestnuts, drained and sliced
4 duck breast fillets, roasted and sliced (see page 49)
orange slices, to serve
DRESSING:
3 tbsp fish sauce
1 ˝ tbsp lime juice
2 garlic cloves, crushed
1 red chilli peppers, deseeded and chopped very finely
1 green chilli pepper, deseeded and chopped very finely
1 tsp palm or demerara sugar
Directions

Mix the lettuce leaves with
the shallots, spring onions (scallions) celery, cucumber,
bean-sprouts and water chestnuts. Place the mixture on a large
serving platter.

Arrange the duck breast slices
on top of the salad in an attractive overlapping pattern.

To make the dressing, put the
fish sauce, lime juice, garlic chillies and sugar into a small pan,
heat gently, stirring constantly. Taste and adjust the piquancy if
liked by adding more lime juice, or add more fish sauce to reduce
the sharpness.

Drizzle the warm salad
dressing over the duck salad and serve immediately.
JULEINNE
STRIPS
To cut vegetable into julienne strips, first slice thinly into
even-sized slices stack the slices on top of each other, then cut with a
sharp knife into very thin shreds.
