FRIED RICE AND
PRAWNS (SHRIMP)
When you‘ve got
one eye on the clock and a meal to make this the one! Made in a trice,
yet simply stunning to look at, its taste belies its simplicity.

SON-IN-LAW
EGGS
This recipe is supposedly so called
because it is an easy dish for a son-in-law to cook to impress his new
mother-in-law!

GREEN
BEEF CURRY
This is a quickly made curry prepared with strips of beef steak, cubed
aubergine (eggplant) and onion in a cream sauce flavoured with green
curry paste. Serve with fluffy rice and a salad

PAW
- PAW (PAPAYA SALAD)
Choose firm paw-paws – or papayas as they are something called – for
this delicious salad.

(SHRIMPCELLOPHANE
NOODLES WITH SHRIMPS & BEAN-SPROUTS
Cellophane or ‘glass’ noodles are made from mung beans. They are
sold dried, so they need soaking before use.

SON-IN-LAW
EGGS
This
recipe is supposedly so called because it is an easy dish for a
son-in-law to cook to impress his new mother-in-law!
Ingredients:
SERVES 4
6 eggs, hard boiled (hard-cooked) and shelled
4 tbsp sunflower oil
1 onion, sliced thinly
2 fresh red chillies, sliced
2 tbsp sugar
1 tbsp water
2 tsp tamarind pulp
1 tbsp liquid seasoning such as Maggi
Directions

Prick the
hard-boiled (hard-cooked) eggs 2 or 3 times with a cocktail stick
(toothpick).

Heat the oil in
a wok or large, heavy frying pan (skillet) and fry the eggs until
crispy and golden. Drain on paper towels.

Halve the eggs
lengthways and put on a serving dish.

Reserve 1
tablespoon of the oil, pour off the rest, then heat the
tablespoonful in the wok or pan (skillet). Cook the onion and
chillies over high heat until golden and slightly crisp. Drain on
paper towels.

Combine
the sugar, water tamarind pulp and liquid seasoning. Simmer for 5
minutes until thickened.

Pour the sauce
over the eggs and spoon over the onion and chillies. Serve
immediately with rice.
TAMAEIND
PLUP
Tamarind pulp is sold in oriental stores, and is quite sour. If it is
not available, use twice the amount of lemon juice in its place.
PERFECT EGGS
When hard-boiling (hard-cooking) eggs, stir the
water gently one way, then the other, and you will have beautiful
centred yolks.
