This is a quickly made curry prepared with strips of beef steak, cubed aubergine (eggplant) and onion in a cream sauce flavoured with green curry paste. Serve with fluffy rice and a salad

Choose firm paw-paws – or papayas as they are something called – for this delicious salad.

Cellophane or ‘glass’ noodles are made from mung beans. They are sold dried, so they need soaking before use.

 

 

SHRIMP & SWEETCORN PATTIES

 

SHRIMP & SWEETCORN PATTIES

Chopped shrimps and sweetcorn are combined in a light batter, which is dropped in spoonfuls into hot fat to make these tasty patties.

Ingredients:


SERVES 4

125 g/4 oz/ 1 cup plain (all-purpose) flour
1 ˝ tsp baking powder
˝ tsp salt
2 eggs
about 250 ml/ 8 fl oz/ 1 cup cold water
1 garlic clove, chopped very finely
3 spring onions (scallions), trimmed and chopped very finely
250 g/ 8 oz/ 1 cup peeled shrimps (small shrimp), chopped
125 g/ 4 oz/ ˝ cup canned sweetcorn, drained
vegetable oil for frying
pepper


TO GARNISH:
Spring onion (scallion) brushes
Lime slices
1 chilli flower 

Directions

1.                  Shift the flour, baking powder and salt into a large bowl. Add the eggs and half the water. Use a whisk to beat the mixture together to make a smooth batter, adding extra water to give consistency of double (heavy) cream.

2.                  Add the garlic and spring onions (scallions) to the batter. Cover and set aside for about 30 minutes.

3.                  Stir the shrimps and sweetcorn into the batter, mixing well. Season with pepper.

4.                  Heat 2 – 3 tablespoons vegetable oil in a frying pan (skillet). Drop tablespoonfuls of the batter into the pan and cook over a medium heat until bubbles rise and surface just sets. Flip the patties over and cook the other side until golden brown. Drain on paper towels.

5.                  Cook the remaining batter in the same way, adding more vegetable oil to frying pan (skillet) as required.

6.                  Garnish with a spring onion (scallion) brush, lime slices and a chilli flower and serve at once.

SPRING ONION (SCALLION) BRUSHES

Make a spring onion (scallion) brush trimming off the tip of the leaves and making several fine cuts from the leaf tips to the top of the bulb. Place in iced water to make the leaves curl.
