This is a quickly made curry prepared with strips of beef steak, cubed aubergine (eggplant) and onion in a cream sauce flavoured with green curry paste. Serve with fluffy rice and a salad

Choose firm paw-paws – or papayas as they are something called – for this delicious salad.

Cellophane or ‘glass’ noodles are made from mung beans. They are sold dried, so they need soaking before use.

 

 

MANGO PARFAIT

 

MANGO PARFAIT

This is a beautiful soft parfait that can be served straight from the freezer. Serve with crisp dessert biscuits (cookies) or, when time and the waistline allows, with deep-fried, sugar dusted wonton.

Ingredients:


SERVES 4

1 large ripe mango
Juice of 1 lime
About 1 tbsp caster (superfine) sugar
3 egg yolks
50 g/2 oz/ ½ cup icing (confectioners’) sugar, sifted
150 ml/ ¼ pint/ 2/3 cup double (heavy) cream
shredded lime rind, to decorate
fried wontons dusted with sugar, to serve (optional)

Directions

1.                  Peel the mango and slice the flesh away from the stone. Puree in a food processor or blender with the lime juice and caster (superfine) sugar to taste, until the mixture is smooth.

2.                  Beat the egg yolks with the icing (confectioners’) sugar until the mixture is pale and thick, then fold in the mango puree.

3.                  Whip the cream until it stands in soft peaks. Fold into the mango mixture with a metal spoon.

4.                  Pour the mango mixture into 4 freezer proof serving glasses and freeze until firm, about 4-6 hours.

5.                  Serve the parfaits straight from the freezer (they will be soft enough to scoop) with crisp dessert biscuits (cookies) or warm fried wonton (see instructions below) dusted with sugar..

  FRIED WONTON
Allow about 2 wontons per person. Deep-fry the wonton skins in hot oil for about 30 seconds until crisp and golden. Drain on paper towels, then dust with icing (confectioners’) sugar to serve.
